三 | 2023年,青海就出台《关于促进青海拉面产业高质量发展的指导意见》,明确推行“三店合一”模式,注册“青海拉面”区域公用品牌,将拉面经营店、特色农畜产品展销店、大美青海宣传店融为一体。顾客进店除了吃面,还能买到牦牛肉、青稞饼干、循化辣椒等青海特产。《青海拉面品质指南》《青海拉面区域品牌培育与建设指南》等地方标准相继发布,从汤料用什么骨头熬、辣椒油用什么品种炼,到品牌怎么建、怎么管,都有明确规范。一碗面,联结起餐饮、农业和文旅3个产业。与此同时,这碗面的“正名”背后,还藏着更大的产业发展目标。2025年2月,青海推出省级区域公共品牌“青海家宴”,覆盖食材供应、特色餐饮、线上销售等环节,将牦牛藏羊、青稞藜麦、祁连黄菇等高原优质食材串联成一套完整的产业图谱。“青海拉面”正是这张产业图谱上一个亮眼的入口,不只是换一块招牌,更是要以一碗面为支点,推动青海特色农产品和文旅资源走向全国乃至世界。从借名求生到立名图强,青海拉面走了条不短的路。
